The new sake that is transferred to the tank from winter to spring is pasteurized in the bottle, and after it has aged moderately over the summer, it is shipped when it has developed a rich, mellow flavor.
This product is a pasteurized version of "Odo Junmai Ginjo Nama Genshu Directly Drawn from the Tank," which was tasted and evaluated by Robert Parker, the world's most influential wine critic, and was certified as an "outstanding" product, receiving high marks.
The acidity unique to Namamoto and the umami of the rice that is characteristic of Niida Honke make a great pairing with spicy Chinese dishes such as yellowtail or tuna carpaccio with sesame oil, grilled chicken thigh with rock salt, or shrimp in chili.
