焼酎造りだけにとどまらず、原料の芋も自社の畑で育てるなど「無農薬、無肥料の自家栽培芋」にこだわった造り手。
白石酒造さんの地元では農家の高齢化が進み、耕作放棄地となっている畑が数多くあり、土地の持ち主の方々にご理解とご協力をいただき、これらの土地をお借りして畑を開墾、さつま芋を作る取り組みを行っています。
現在何か所か畑がありますが、すべて土質が違う畑。
土や芋と向き合いながら芋造り、お酒造りを行われています。

In the local area of Shiraishi Sake Brewery, there are many abandoned farmlands due to the aging of farmers. We are working to rent these lands, cultivate them, and grow sweet potatoes.
This time, we visited a sandy field in the Uto area that had been left fallow for two years to allow the soil to build up its fertility. Sweet potatoes grown in the Uto area are known for their clean, fine-grained flavor. Koganesengan sweet potatoes were grown without fertilizer in the sandy field and then aged for 60 days after harvest, nearly twice as long as usual. The long aging period gives them a mature aroma and a unique crispness in flavor.
