Niida Honke is a brewery that preserves natural methods of production, offering a pleasant and refreshing feeling in the warmth of spring.
We only use organically grown or natural rice. We avoid additives.
They do not use lactic acid for brewing, instead using white koji and kimoto brewing, and are thorough in their brewing process.
This slightly cloudy color contains gas from secondary fermentation in the bottle.
It uses white koji, giving it a refreshing and juicy taste.
The ginjo aroma is reminiscent of fresh apples and is very refreshing. It's truly a Japanese-style champagne!
