In the local area of Shiraishi Sake Brewery, there are many abandoned farmlands due to the aging of farmers. We are working to rent these lands, cultivate them, and grow sweet potatoes. This time, we visited a sandy field in the Uto area that had been left fallow for two years to allow the soil to build up its fertility. Sweet potatoes grown in the Uto area are known for their clean, fine-grained flavor. Koganesengan sweet potatoes were grown without fertilizer in the sandy field and then aged for 60 days after harvest, nearly twice as long as usual. The long aging period gives them a mature aroma and a unique crispness in flavor. Please enjoy the different flavors of sweet potatoes from each region.

創業は明治27年、家族で焼酎造りを続けています。焼酎造りだけにとどまらず、原料の芋も自社の畑で育てるなどこだわり抜いた造り手です。「無農薬、無肥料の自家栽培芋へのこだわり」白石酒造さんの地元では農家の高齢化が進み、耕作放棄地となっている畑が数多くあります。白石酒造さんは、土地の持ち主の方々にご理解とご協力をいただき、これらの土地をお借りして畑を開墾し、さつま芋を作る取り組みを行っています。
