A sake brewery that brews only kimoto junmai sake using naturally grown rice Niida Honke The way they move forward without any hesitation to become a "sake brewery that protects Japan's rice fields" makes the liquor store excited. Niida Honke's sake brewing is free-flowing "Sake not made by humans, but by the power of rice and microorganisms" This sake is made without adding yeast, and it's like a natural mutation, with only one tank having an acidity of 5.0. I received a sample and it was sweet and sour, a taste I'd never experienced before, delicious and interesting! There seem to be many different ways to drink it, so I thought, "Please let me try it," and it will only be sold at Kagoya in Tokyo. This is a drink that can be enjoyed in any setting, whether Japanese, Western, or Chinese. We will do our best as a liquor store so that sake breweries can continue to challenge themselves at any time! Brewery Information A special order of Niidashi Zenshu Junmai Genshu. It wasn't brewed with this intention in mind, but rather, it was a sudden mutation that resulted in an acidity of 5.0 in just this one batch. Therefore, we will not be able to aim for the same quality of sake next year, so this is just a one-time proposal, but we would appreciate your consideration.
