Saku-87 Saku no Hana Junmai Ginjo

This Junmai Ginjo sake is brewed with Saku-1 yeast. Saku-1 yeast is a yeast that was obtained from cosmos in Saku by the Saku Sake Brewers Association's youth division in cooperation with Tokyo University of Agriculture. Perhaps because it is a yeast found in nature, the taste is natural and unique. It has almost no ginjo aroma (almost no aroma), which is currently mainstream, and a gentle, mineral-like taste.
