This limited edition sake was brewed to commemorate the 100th anniversary of the founding of the Yamauchi Toji Association in Akita Prefecture. The Kyokai No. 1 yeast, which was used at the time of the brewery's founding, has been revived using modern technology. At the time, they used rice for brewing, so the rice polishing ratio was 90-95%, and the mash was fermented at room temperature, so it was pressed in about 10 days. This time, the rice polishing ratio is 50%, and the mash was fermented for 29 days. Brewed with Hyakuden, a new rice variety from Akita that is suitable for sake brewing. Rice: Hyakuden, Polishing ratio: 50%, Sake meter value: +1, Acidity: 1.8
