Just before the mash is released into the press, a sweetened liquid similar to amazake is added (four-stage brewing process), resulting in a refreshing, sharp sake with a hint of sweetness. It's a slightly cloudy, slightly effervescent sake. It's a refreshing sake, almost like soda. It pairs perfectly with cream cheese!
