We received a share of No. 6 yeast from Aramasa Sake Brewery, and this is Kaze no Mori's first product using No. 6 yeast in 20 years! We polished the Akitsuho rice from our contracted farm in Nara Prefecture to 66%, in honor of No. 6 yeast. While No. 6 yeast is known for its simple flavor, we fermented the mash at low temperatures for a long period of time in Abunaga Sake Brewery's unique fermentation tanks to bring out its rich aroma and flavor. Additionally, the ultra-hard water from the Kongo-Katsuragi mountain range gives this sake a thick texture and a gentle flavor. Its gentle, mellow aroma, reminiscent of blue melon and gourd, spreads a gentle sweetness and acidity upon sipping. *One bottle per person please.
